Ingredients
1 T olive oil
1 T sesame oil
1 bunch green onions, chopped and separated into white and green parts
3 cloves garlic, minced (OR 1/2 t ground garlic)
1 T ginger, grated (OR 1/2 t ground ginger)
1 pound ground pork
1/4 c coconut aminos
1 14 oz bag “cole slaw mix” (or 1/2 head white cabbage, shredded)
1 bag shredded carrots 1
cup cashews, optional
sesame seeds for topping, optional
sriracha, optional
Instructions
Heat olive oil and sesame oil in a pot on medium high. Add the white parts of the green onions, garlic, and ginger, and stir until fragrant, about 2-3 min.
Add the ground pork and coconut aminos. Cook, constantly breaking apart the meat, until the meat is browned and fully cooked through.
After five minutes of cooking the meat, add the shredded carrots and continue to cook. At the *very* end, add the cole slaw mix. Continue to stir until the cabbage is just tender, not fully cooked.
Add to bowls and top with the green onions, cashews, sesame seeds, and sriracha. Enjoy!
