It’s snowing in Denver today and the craving for something warm and satisfying. The craving was strong enough that I finally dove in and created this masterpiece!

Braised Beef Instant Pot Whole30 Paleo

This Instant Pot Braised Beef recipe for the is SO easy and delicious. When I make this in my Instant Pot, I can sear my meat, add all the ingredients, and sit by the fireside reading a great book until the beef is cooked. 

This beef is enjoyable served with roasted vegetables, cauliflower rice and especially my mashed potatoes recipe

Always a crowd pleaser, this recipe easily serves 4 to 6 people or freeze the leftovers and use later for tacos, hashes, sandwiches, soups and more.

Braised Beef Recipe – Instant Pot (Whole30 + Paleo)

Ingredients

  • 4 tablespoons butter (or ghee for dairy free)
  • 1 onions, finely diced
  • 2 lb beef chuck
  • 1/4 c red wine vinegar (or red wine, if you’re feeling it)
  • 1 t dried rosemary
  • 1 t dried thyme
  • 2 bay leaves
  • 3 garlic cloves, minced
  • Salt and pepper
  • 4 cups beef bone broth

Instructions

  1. Heat 2 T butter in your InstantPot on the sauté setting and cook the onions until they are softened, about 7 min. 
  2. Add the beef chuck and sear until crispy, about 5 min, then flip and do the same on the other side. 
  3. Sprinkle the beef chuck with rosemary, thyme, garlic, and salt and pepper. Add the red wine vinegar, bay leaves, and bone broth to the side.
  4. Put on the lid of the InstantPot and hit beef/ stew, and change the time to 1 hour. 
  5. I like to shred my meat in my Kitchenaid mixer with my whisk attachment- it makes it SO easy. 
  6. Serve beside roasted vegetables or my favorite way- over my Mashed Potatoes! Enjoy!
