Looking for easy? And fast? This Whole30 Beef Stew Recipe is probably my easiest recipe of ALL TIME. But somehow, miraculously, that doesn’t compromise taste! Seriously the only thing that’s hands on is chopping an onion… You can do this!!
Don’t have an InstantPot? You can do the same with a pot on the stove and cook until meat is cooked through and veggies are done!

Ingredients
- 2 lb beef stew meat
- 1 16 oz bag of baby carrots or 6 whole carrots, chopped
- 1 1.5 lb bag of baby bite-sized potatoes (or fingerling)
- 1 onion, chopped (or tiny pearl onions)
- 4 cups (1 box) beef broth (@barebonesbroth is my favorite!)
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 2 whole bay leaves
- 2 t dried parsley
- 3–4 garlic cloves, minced or pressed
- 2 T balsamic vinegar
- 1 teaspoon paprika
- ½ t salt (or to taste)
- ½ t pepper (or to taste)
Instructions
- Chop the onion and throw it in the InstantPot.
- Add all other ingredients and click “beef/ stew.”
