Cucumber Tomato salad reminds me of my grandmother… My father’s mother. So of course I just had to make a paleo cucumber tomato salad recipe! My grandmother is no longer with us, but I’ve been told I’m a lot like her. Almost every dinner in the summertime had sliced tomatoes, with a little bit of salt, of course! I think it’s a Kentucky thing. Or maybe it’s a southern thing. All I know is that it instilled in me a love of tomatoes!
This paleo cucumber tomato salad has a greek flare, and it’s entirely delicious! It would be the perfect side that everyone would love to take to a summer barbecue or potluck. In my opinion the fresh dill is what makes this recipe. Make it and tell me what you think!

Ingredients
- 5 roma tomatoes, chopped
- 7 mini cucumbers, cut in circular slices
- 3 T red onion, chopped
- 1 T fresh dill, finely minced
- 1/4 c red wine vinegar
- 3 T olive oil
- 1/2 t salt
- 1/2 t pepper
Instructions
- Chop all ingredients per the instruction, then combine! You can enjoy right away, or let marinate for a few hours before serving.
